  • 2 medium oranges (juicy navel or blood oranges)
  • 1 medium ruby red grapefruit
  • 1 cup fresh pomegranate seeds
  • Β½ small red onion (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients: Rinse mixed greens under cold water and dry thoroughly.
  2. Segment the citrus: Slice both ends off the oranges and grapefruit, then remove the peel and cut into segments.
  3. Extract pomegranate seeds: Cut the pomegranate in half over a bowl; gently tap with a wooden spoon to release seeds.
  4. Toss ingredients: In a large bowl, combine mixed greens, citrus segments, pomegranate seeds, and red onion. Drizzle with olive oil, balsamic vinegar, honey or maple syrup, salt, and pepper.
