  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 cup shelled pistachios (chopped)
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat the air fryer to 320°F (160°C).
  2. In a bowl, whisk together flour, sugar, baking powder, and half of the chopped pistachios.
  3. In another bowl, cream the softened butter until fluffy; gradually add sugar.
  4. Mix in eggs one at a time followed by vanilla extract.
  5. Combine the dry ingredients with the wet mixture, alternating with milk until just mixed.
  6. Pour batter into a greased pan and top with remaining pistachios. Bake for 25-30 minutes or until a toothpick comes out clean.
