Ingredients

  • 2 medium acorn squash
  • 2 tbsp olive oil
  • 1 cup cooked quinoa
  • 2 cups fresh spinach (wilted)
  • ½ cup crumbled feta cheese
  • ¼ cup toasted pine nuts
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Slice each acorn squash in half lengthwise and scoop out seeds.
  3. Brush the insides with olive oil and season with salt, pepper, and garlic powder.
  4. Place squash halves in the air fryer basket; cook for 15-20 minutes until tender.
  5. In a bowl, mix cooked quinoa, wilted spinach, feta cheese, and pine nuts.
  6. Stuff each squash half with the filling and return to the air fryer for another 5-7 minutes until heated through.
  7. Let cool slightly before serving; garnish with extra feta or pine nuts if desired.
