- 1 cup cooked quinoa

Instructions
- Preheat air fryer to 375°F (190°C).
- Slice each acorn squash in half lengthwise and scoop out seeds.
- Brush the insides with olive oil and season with salt, pepper, and garlic powder.
- Place squash halves in the air fryer basket; cook for 15-20 minutes until tender.
- In a bowl, mix cooked quinoa, wilted spinach, feta cheese, and pine nuts.
- Stuff each squash half with the filling and return to the air fryer for another 5-7 minutes until heated through.
- Let cool slightly before serving; garnish with extra feta or pine nuts if desired.
