  • 3 cups chicken or vegetable broth
  • 1 cup grated Parmesan cheese
  • 1 cup fresh mozzarella cheese, diced
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh parsley, chopped
  • Vegetable oil for frying (enough for deep frying)

Instructions

  1. Prepare the risotto by simmering broth in a saucepan. In another pot, sauté onions in butter until translucent, then add Arborio rice and toast lightly. Gradually stir in broth until creamy.
  2. Once cooked, let the risotto cool slightly before mixing in Parmesan cheese and chopped parsley.
