Instructions
- Rinse lentils under cold water and set aside.
- In a medium saucepan, combine lentils with 3 cups water. Bring to a boil, then simmer for 20-25 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté garlic and ginger for about one minute until fragrant.
- Drain lentils and add to the skillet along with soy sauce and rice vinegar. Cook on low for 5 minutes.
- Spoon the lentil mixture into washed lettuce leaves and serve drizzled with sesame oil.
