  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup ketchup (preferably no high fructose corn syrup)
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Evenly season the chicken breasts with salt and pepper on both sides.
  3. In a medium bowl, whisk together soy sauce, brown sugar, ketchup, and apple cider vinegar until smooth.
  4. Place the chicken in the prepared baking dish and pour half of the BBQ sauce over it, ensuring even coating.
  5. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C), basting with remaining sauce halfway through.
  6. Serve hot, drizzled with extra sauce and garnished with fresh parsley if desired.
