Ingredients

  • 1 cup cooked beets (approximately 2 medium beets)
  • 1 can (15 oz) canned chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) if using fresh beets. Wrap each beet in aluminum foil and roast for about an hour until tender. Let them cool before peeling.
  2. In a food processor, combine cooked beets, chickpeas, tahini, lemon juice, garlic, salt, and pepper. Pulse until the mixture is chunky.
  3. With the processor running, slowly drizzle in the olive oil until smooth and creamy.
  4. Taste and adjust seasoning as needed—add more lemon juice or garlic if desired.
  5. Transfer to a serving bowl and drizzle with additional olive oil; garnish with sesame seeds or herbs.
  6. Serve with pita chips or fresh veggies.
