Description

Beet Salad is a stunning dish that combines the earthy sweetness of roasted beets with the crunch of walnuts and creamy feta, all tossed in a tangy balsamic vinaigrette. Ingredients

  • 4 medium fresh beets (about 1 lb)
  • 4 cups mixed greens (arugula and spinach)
  • 1 cup crumbled feta cheese
  • ½ cup toasted walnuts
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and arrange on a baking sheet. Roast for 45-60 minutes until fork-tender.
  2. Allow the beets to cool slightly, then peel off the skins using gloves and slice into bite-sized pieces.
  3. While the beets cool, wash mixed greens thoroughly and place them in a large salad bowl.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until emulsified.
  5. Toss sliced beets over the greens along with crumbled feta cheese and toasted walnuts. Drizzle dressing over everything.
  6. Serve immediately on individual plates or from the bowl.
