Instructions
- Remove stems and seeds from the dried guajillo chiles; soak them in hot water for 15 minutes.
- Blend soaked chiles with garlic, onion, cumin powder, 1 cup of beef broth, and lime juice until smooth.
- Heat oil in a large pot over medium-high heat; season chuck roast with salt and pepper and sear on all sides.
- Add the blended sauce and remaining beef broth; bring to a simmer and cook on low for 3 hours until meat is tender.
- Shred the cooked meat using two forks.
