Ingredients

  • 3 lbs chuck roast
  • 6 dried guajillo chiles
  • 5 cloves fresh garlic
  • 1 medium onion, chopped
  • 1 tsp cumin powder
  • 4 cups beef broth
  • Juice of 2 limes

Instructions

  1. Remove stems and seeds from the dried guajillo chiles; soak them in hot water for 15 minutes.
  2. Blend soaked chiles with garlic, onion, cumin powder, 1 cup of beef broth, and lime juice until smooth.
  3. Heat oil in a large pot over medium-high heat; season chuck roast with salt and pepper and sear on all sides.
  4. Add the blended sauce and remaining beef broth; bring to a simmer and cook on low for 3 hours until meat is tender.
  5. Shred the cooked meat using two forks.
  6. Warm tortillas on a skillet; fill each with shredded meat, drizzle sauce on top, fold, and serve.
