- 2–3 bay leaves
- 1 large onion, quartered
- 4 cups low-sodium beef broth
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Heat a skillet over medium heat and toast the dried guajillo chiles for about 2 minutes until fragrant.
- In a blender, combine toasted chiles, garlic, cumin seeds, onion quarters, and 2 cups of beef broth; blend until smooth.
- Marinate the beef chuck roast with the marinade in a bowl or resealable bag for at least 2 hours (overnight is best).
- Sear the marinated roast in a large pot over medium-high heat until browned on all sides (about 4-5 minutes per side).
- Add remaining marinade, bay leaves, and additional beef broth; bring to a gentle boil before reducing heat to low.
