  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 1 cup bell peppers (mix of red and green), diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 4 cups chicken broth
  • ¼ cup green onions, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion, bell peppers, and garlic until softened (about 5 minutes).
  2. Add sliced smoked sausage to the skillet and cook until browned on all sides (around 5 minutes).
  3. Stir in Cajun seasoning to coat the sausage and vegetables evenly.

  5. Remove from heat; let stand covered for an additional 5 minutes before fluffing with a fork.
