  • 1 cup all-purpose flour
  • 2 tablespoons cocoa powder (optional)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 tablespoon white wine (or vinegar)
  • Vegetable oil (for frying)
  • 1 cup ricotta cheese (drained)
  • 1/2 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips

Instructions

  1. In a mixing bowl, combine flour, cocoa powder (if using), granulated sugar, and salt. Create a well in the center, add the egg and white wine, and knead until smooth.
  2. Wrap the dough in plastic wrap and chill for 1 hour.
  3. Roll out the chilled dough to about 1/8 inch thick and cut into circles (approximately 4 inches in diameter).
  4. Heat vegetable oil in a deep pan over medium heat. Wrap each circle around metal cannoli tubes, sealing edges with egg wash. Fry until golden brown (about 2 minutes per side). Drain on paper towels.
  5. In another bowl, mix ricotta with confectioners' sugar until smooth. Stir in vanilla extract and fold in chocolate chips.
  6. Once shells are cool, carefully remove from tubes and fill with ricotta mixture just before serving.
