Instructions
- In a mixing bowl, combine flour, cocoa powder (if using), granulated sugar, and salt. Create a well in the center, add the egg and white wine, and knead until smooth.
- Wrap the dough in plastic wrap and chill for 1 hour.
- Roll out the chilled dough to about 1/8 inch thick and cut into circles (approximately 4 inches in diameter).
- Heat vegetable oil in a deep pan over medium heat. Wrap each circle around metal cannoli tubes, sealing edges with egg wash. Fry until golden brown (about 2 minutes per side). Drain on paper towels.
- In another bowl, mix ricotta with confectioners' sugar until smooth. Stir in vanilla extract and fold in chocolate chips.
- Once shells are cool, carefully remove from tubes and fill with ricotta mixture just before serving.
