  • 1 cup crushed Biscoff cookies
  • 8 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs (room temperature)
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, crushed Biscoff cookie crumbs, baking powder, and salt.
  3. In a separate large bowl, beat cream cheese with granulated and brown sugars until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually combine the dry ingredients with the wet mixture until just blended.
  5. Drop tablespoon-sized balls of dough onto prepared sheets, spacing them two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  6. Cool on baking sheets for five minutes before transferring to wire racks.
