- 4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 4 large russet potatoes
- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Clean and bake russet potatoes until soft.
- In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, garlic powder, and onion powder. Cook until golden brown.
- Add fresh broccoli florets to the skillet during the last few minutes of cooking until bright green and tender-crisp.
- In a bowl, combine sour cream and shredded cheddar cheese until smooth.
- Cut baked potatoes in half lengthwise; scoop out some flesh for filling. Layer the chicken-broccoli mixture inside each potato half and top with cheesy goodness.
