Instructions

  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In a mixing bowl, beat softened butter with brown sugar and granulated sugar until light and fluffy.
  4. Add the egg and molasses; mix until fully combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Scoop dough into balls (about 1 tablespoon each), roll in granulated sugar, and place on prepared sheets about two inches apart.
  7. Bake for 10–12 minutes until edges are set but centers remain soft. Cool on wire racks.
