  • 2 cups cooked rice (preferably day-old)
  • 1 cup frozen green peas
  • 1 cup diced carrots
  • 2 cloves fresh garlic (minced)
  • 4 tablespoons low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions (chopped)

Instructions

  1. Chop chicken and vegetables into bite-sized pieces.
  2. Heat a large skillet over medium-high heat, add oil, and cook chicken until golden brown and fully cooked. Season with salt and pepper.
  3. Remove chicken from skillet; add minced garlic and sauté until fragrant. Then, add diced carrots and peas.
  4. Return the cooked chicken to the skillet along with the rice and drizzle soy sauce over the mixture. Stir well to combine.
  5. Finish by drizzling sesame oil over the dish and mixing in chopped green onions just before serving.
  6. Serve immediately, garnished with extra green onions if desired.
