- 3–4 boneless, skinless chicken breasts
- 1 cup Italian breadcrumbs
- 1 cup marinara sauce
- 8 oz fresh mozzarella cheese, sliced
- 1/4 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Tenderize chicken by placing between plastic wrap and pound until about 1-inch thick.
- Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and the last with Italian breadcrumbs. Coat each chicken breast in flour, then egg, then breadcrumbs.
- Heat olive oil in a skillet over medium heat. Fry the breaded chicken until golden brown on both sides (about 4-5 minutes per side).
- Place fried chicken on the prepared baking sheet. Spoon marinara sauce over each piece and top with mozzarella and grated Parmesan.
- Bake for about 20 minutes until cheese is bubbly and slightly browned.
- Serve in sub rolls, garnished with fresh basil.
