  • 4 boneless, skinless chicken breasts (about 680g)
  • 3 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 6 cups low-sodium chicken broth (1.42 liters)
  • 1/4 cup soy sauce (60ml)
  • 12 oz fresh ramen noodles (340g)
  • 2 green onions, thinly sliced
  • 4 soft-boiled eggs
  • 4 sheets nori

Instructions

  1. Prepare your ingredients by chopping the garlic and grating the ginger.
  2. In a large pot over medium heat, sauté garlic and ginger in oil until fragrant (about 2 minutes).
  3. Add chicken breasts, broth, and soy sauce; bring to a simmer and cook until the chicken is done (15-20 minutes).
  4. Remove chicken, shred it, then add fresh ramen noodles to the broth; cook according to package instructions.
