  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 6 cups low-sodium chicken broth

Instructions

  1. Prep your ingredients by chopping the vegetables and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sear seasoned chicken breasts for about 5 minutes per side until golden brown. Remove from pot.
  3. In the same pot, add onions, celery, and carrots; cook until softened (about 5 minutes). Stir in garlic for an additional minute.
  4. Return chicken to the pot with thyme and bay leaves; pour in chicken broth until covered by an inch. Bring to a boil then reduce to a simmer.
  5. Cover and simmer for 30-40 minutes until chicken is tender. Shred chicken with two forks and return to the pot; stir well before serving.
