  • 3 cloves fresh garlic, minced
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber, grated
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh dill, chopped
  • 2 tbsp olive oil
  • 1 cup long grain rice (basmati or jasmine)
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper. Coat the chicken breasts well and let marinate for at least 30 minutes.
  2. Grill the chicken: Preheat your grill to medium-high heat (375°F). Cook marinated chicken for about 6–7 minutes per side until the internal temperature reaches 165°F.
  3. Prepare tzatziki sauce: In a bowl, combine Greek yogurt, grated cucumber (squeezed to remove excess moisture), dill, minced garlic, lemon juice, salt, and pepper. Mix until creamy.
  4. Cook rice: In a pot, bring 2 cups of water to a boil. Add rinsed rice and a pinch of salt; lower heat and cover. Cook until fluffy according to package instructions (~15 minutes).
  5. Serve: Plate rice as a base, slice grilled chicken over it, and top with tzatziki sauce.
