  • 1 medium zucchini, grated and moisture squeezed out
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup ranch dressing (for serving)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Chop chicken into small pieces and grate zucchini; squeeze out excess moisture.
