  • 2 bone-in veal shanks (about 23 lbs)
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • 2 star anise pods
  • 2 tbsp brown sugar
  • 2 cups beef broth
  • 2 tbsp oil (for searing)

Instructions

  1. Gather all ingredients and finely chop garlic and ginger.
  2. In a large Dutch oven, heat oil over medium heat. Sear veal shanks until browned on all sides (about 5 minutes per side), then remove from pot.
  3. Add minced garlic and ginger to the pot; sauté for 2 minutes until fragrant.
  4. Return the veal to the pot and add soy sauce, beef broth, brown sugar, and star anise. Stir to combine.
  5. Bring to a gentle boil, cover with a lid, reduce heat to low, and simmer for about 2 hours or until fork-tender.
  6. Serve veal shank on plates with sauce drizzled over top.
