- 1 tbsp sesame oil
- 1 tbsp cornstarch

- ½ cup fresh mango juice
- 2 tbsp rice vinegar
- 1 tbsp honey or brown sugar

Instructions
- Slice chicken into bite-sized pieces and toss with cornstarch and soy sauce. Let marinate for 10 minutes.
- Heat sesame oil in a wok over medium-high heat. Sauté minced garlic and ginger until fragrant.
- Add marinated chicken in a single layer; cook for about 4 minutes per side until golden brown.
- Stir in bell peppers and onions; cook until veggies are tender-crisp.
- In a bowl, whisk together mango juice, rice vinegar, honey/brown sugar, and cayenne (if using). Pour over stir fry and simmer for one minute.
- Gently fold in diced mango; warm through for an additional 1–2 minutes.
