  • 2 cups low-sodium vegetable broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan over medium heat, add olive oil and sauté minced garlic for about one minute until fragrant.
  3. Stir in the rinsed rice and sauté for an additional two minutes until it glistens.
  4. Pour in vegetable broth and bring to a boil. Reduce heat to low, cover tightly, and simmer for 18-20 minutes or until liquid is absorbed.
  5. Remove from heat and fluff the rice with a fork. Mix in lime juice and chopped cilantro before serving.
