- 1/2 cup sago pearls
- 1 can (400ml) full-fat coconut milk
- 2 ripe mangoes, diced
- 1/2 cup brown sugar (adjust to taste)
- 3 cups water
Instructions
- Rinse sago pearls under cold water until clear. Boil 3 cups of water in a pot and add the pearls. Cook until translucent (10-12 minutes). Drain and rinse under cold water.
- In another saucepan, mix coconut milk and brown sugar over low heat until dissolved.
- Combine cooled sago pearls with diced mango in a bowl. Pour in the coconut sauce and gently mix.
- Cover and refrigerate for at least one hour before serving.
- Serve chilled, garnished with extra mango if desired.
