  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 2 tsp freshly cracked black pepper
  • 1 tsp salt
  • 4 tbsp unsalted butter (for gravy)
  • 2 cups whole milk (for gravy)

Instructions

  1. Slice the beef round steak into half-inch thick portions and tenderize with a meat mallet. Season both sides generously with salt and pepper.
  2. Soak the steak pieces in buttermilk for at least 1 hour in the refrigerator.
  3. Set up a dredging station with seasoned flour in one dish. Coat each marinated steak in flour and shake off excess.
  4. Heat about half an inch of oil in a large skillet over medium-high heat until shimmering (around 350°F). Fry each steak for about 3 minutes per side until golden brown; drain on paper towels.
  5. In the same skillet, melt butter over medium heat. Whisk in leftover flour from dredging until golden brown. Gradually add milk, whisking until smooth and thickened; season as desired.
  6. Serve the steaks hot, drizzled with gravy alongside your favorite sides.
