  • 1 lb ribeye steak (1-inch thick)
  • 2 tsp sea salt
  • 1 tsp freshly cracked black pepper
  • 4 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp fresh chives (chopped)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp Worcestershire sauce

Instructions

  1. Let the ribeye steak sit at room temperature for 30 minutes before cooking.
  2. Season both sides generously with sea salt and black pepper.
  3. Heat a cast-iron skillet over medium-high heat until smoking hot; add 1 tablespoon of oil.
  4. Sear the ribeye for about 4-5 minutes on each side until a brown crust forms.
  5. In the last minute, lower the heat and add butter, garlic, Worcestershire sauce, parsley, chives, and lemon juice to the pan; baste the steak with this mixture.
  6. Remove from heat and let rest for five minutes before slicing against the grain and drizzling with remaining cowboy butter sauce.
