  • 34 lbs chuck roast
  • 1 cup cranberry sauce (homemade or store-bought)
  • 1 cup low-sodium beef broth
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a skillet over medium-high heat, sear the chuck roast on all sides until browned (about three minutes per side).
  3. Sauté sliced onions and minced garlic in the same skillet until soft (about five minutes).
  4. Transfer the seared roast to a roasting pan, surround it with chopped carrots and potatoes, then pour over cranberry sauce and beef broth. Top with thyme and rosemary.
  5. Cover tightly with foil or a lid and bake for approximately three hours until tender.
  6. Let rest for 15-20 minutes before slicing and serving with sauce.
