  • 14 oz firm tofu, drained and cubed
  • 2 tbsp olive oil
  • 2 tsp curry powder
  • 8 oz rice noodles
  • 1 cup fresh green beans, trimmed
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp low-sodium soy sauce
  • 1 inch fresh ginger, minced
  • Juice of 1 lime

Instructions

  1. Press the tofu to remove excess moisture and cut into cubes.
  2. Heat olive oil in a skillet over medium heat; fry tofu until golden brown on all sides (about 10 minutes). Drain on paper towels.
  3. Cook rice noodles according to package instructions; drain and set aside.
  4. In the same skillet, sauté minced ginger and curry powder for one minute. Add coconut milk and soy sauce; let simmer for a few minutes.
  5. Add green beans and cooked noodles to the skillet; toss to combine thoroughly.
  6. Serve bowls with noodle mixture topped with crispy tofu and a squeeze of lime juice.
