  • 1 medium onion, diced
  • 2 medium carrots, diced

  • 1 (14 oz) can crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until translucent, then add minced garlic and cook until fragrant.
  2. Stir in the carrots and celery, cooking for about five minutes until slightly softened.
  3. Add cumin and cinnamon; stir well to coat vegetables evenly for two minutes.
  4. Incorporate lentils and crushed tomatoes with their juices. Pour in vegetable broth to cover; adjust thickness as desired.
  5. Bring to a boil, reduce heat to low, cover partially, and simmer for 30-40 minutes until lentils are tender.
