  • 1 cup green or brown lentils
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup diced tomatoes (fresh or canned)
  • 2 tbsp Ethiopian spice blend (berbere)
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Chop onion, garlic, ginger, and tomatoes.
  2. In a large pot over medium heat, add olive oil. Sauté onion until translucent (about 5 minutes). Add garlic and ginger; stir until fragrant (about 1 minute).
  3. Mix in the berbere spice blend and cook for another minute.
  4. Add rinsed lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25-30 minutes until lentils are tender.
  5. Stir in spinach until wilted (about 2 minutes). Season with salt and pepper before serving.
