- 2 pounds peeled Russet potatoes, cubed
- 1/2 cup unsalted butter
- 1/2 cup heavy cream (or half-and-half)
- 1 teaspoon salt (plus more to taste)
- 1 teaspoon black pepper (to taste)
- 1 teaspoon garlic powder
Instructions
- Peel and cube the Russet potatoes into roughly one-inch pieces. Rinse under cold water to remove excess starch.
- Place the cubed potatoes in the Instant Pot. Add enough water to cover them by about an inch along with a generous pinch of salt. Secure the lid.
- Set the Instant Pot to manual mode at high pressure for 8 minutes. Once finished, carefully quick-release the pressure.
- Drain excess water from the pot and return potatoes to it. Add unsalted butter and heavy cream.
- Mash with a potato masher or electric mixer until smooth and fluffy. Season with garlic powder, salt, and pepper to taste.
- Serve in a bowl, optionally drizzling with more melted butter.
