Description

Garlic Parmesan Chicken Meatballs are a delightful fusion of juicy ground chicken, aromatic garlic, and rich Parmesan cheese.   • 1 lb boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste
  • 2 tbsp butter
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Chop chicken into chunks and pulse in a food processor until finely ground.
  3. In a large bowl, combine ground chicken, garlic, breadcrumbs, Parmesan cheese, egg, parsley, salt, and pepper. Mix well.
  4. Roll mixture into 1-inch meatballs and place on a baking sheet.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. While baking, melt butter in a saucepan over medium heat; stir in soy sauce to create the sauce.
  7. Drizzle sauce over meatballs before serving.
