  • 1 lb ribeye or sirloin steak
  • 1 lb baby Yukon Gold or red potatoes
  • 6 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary, chopped
  • 2 sprigs fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and wash halved potatoes.
  2. Pat the steak dry; season both sides with salt and pepper.
  3. Toss potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper; spread on a baking sheet.
  4. Roast potatoes for 25-30 minutes until golden brown.
  5. In a skillet over medium-high heat, heat olive oil and cook the seasoned steak for about 4-5 minutes per side for medium-rare.
  6. Remove the steak; melt butter in the same skillet with smashed garlic until fragrant.
  7. Slice the rested steak against the grain and serve alongside crispy potatoes drizzled with garlic butter sauce.
