Ingredients

  • 3 to 4 lbs chuck roast
  • 6 cloves fresh garlic, minced
  • 1 packet ranch dressing mix (1 oz)
  • 1 packet au jus gravy mix (1 oz)
  • 2 tbsp unsalted butter
  • 1 cup baby carrots
  • 1 large yellow onion, sliced

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Season both sides of the chuck roast with salt and pepper.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter and sear the roast until browned on all sides (about 3 minutes per side).
  4. Transfer the roast to a Dutch oven or slow cooker. Surround it with sliced onions and baby carrots, then sprinkle ranch dressing and au jus mixes on top.
  5. Add minced garlic and the remaining tablespoon of butter on top.
  6. Cover and bake in the oven for approximately 4 hours or until fork-tender.
