  • 1 lb ground beef (80/20)
  • 1 cup breadcrumbs
  • ¼ cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil (for searing)
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Juice and zest of 1 lemon

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, parsley, garlic, oregano, salt, and pepper until combined (avoid overmixing).
  2. Wet hands slightly and shape the mixture into 1-inch balls; place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium-high heat. Sear meatballs in batches until browned on all sides (3-4 minutes per side).
  4. Remove meatballs from skillet. Deglaze with chicken broth, scraping up brown bits; stir in lemon juice and zest.
  5. Return meatballs to skillet; reduce heat to low and cover. Simmer for 10-15 minutes.
