- 1 cup breadcrumbs
- ¼ cup fresh parsley, chopped
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil (for searing)
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- Juice and zest of 1 lemon
Instructions
- In a large bowl, mix ground beef, breadcrumbs, parsley, garlic, oregano, salt, and pepper until combined (avoid overmixing).
- Wet hands slightly and shape the mixture into 1-inch balls; place on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium-high heat. Sear meatballs in batches until browned on all sides (3-4 minutes per side).
- Remove meatballs from skillet. Deglaze with chicken broth, scraping up brown bits; stir in lemon juice and zest.
- Return meatballs to skillet; reduce heat to low and cover. Simmer for 10-15 minutes.
