Ingredients

  • 4 cups romaine lettuce, chopped
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry all vegetables thoroughly.
  2. In a large mixing bowl, combine chopped romaine lettuce with diced cucumber and halved cherry tomatoes.
  3. Add sliced red onion and Kalamata olives to the bowl.
  4. Sprinkle crumbled feta cheese over the top.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad just before serving.
