  • 9 lasagna noodles (traditional or no-boil)
  • 2 cups cubed butternut squash
  • 2 cups shredded Havarti cheese
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Toss cubed butternut squash with olive oil, minced garlic, Italian seasoning, salt, and pepper. Roast in the oven for about 25 minutes until tender.
  3. Sauté spinach in olive oil over medium heat until wilted (about 3 minutes). Set aside.
  4. In a bowl, combine ricotta cheese with salt, pepper, and a sprinkle of Italian seasoning until smooth.
  5. Layer the ingredients starting with roasted squash at the bottom of the baking dish; add noodles, spinach, ricotta mixture, and shredded Havarti cheese. Repeat layers and finish with pasta topped with sauce and cheese.
  6. Cover with foil and bake for 30 minutes; uncover for the last 10 minutes for a golden crust.
