- Lamb shoulder
- Carrots

Instructions
- Chop vegetables into even chunks.
- Heat olive oil in a large pot over medium heat; brown the lamb on all sides.
- Remove the lamb and sautรฉ onions and garlic in the same pot until translucent.
- Add carrots, potatoes, thyme, and bay leaves; stir for 3-4 minutes until glistening.
- Return lamb to the pot, add beef broth (and barley if using), and bring to a simmer.
- Cover partially and cook on low for 1.5 hours or until the lamb is fork-tender.
