- 2 Cornish Hens (about 1.5 lbs each)
- 1 cup stuffing mix (homemade or store-bought)
- 1 cup low-sodium chicken broth
- 2 tbsp unsalted butter, softened
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1 tbsp fresh parsley, chopped
- Juice of 1 lemon
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the stuffing mix with chicken broth until desired consistency is achieved. Stir in half of the herbs and garlic powder.
- Pat each Cornish hen dry. Rub softened butter all over their skin and season generously with salt, pepper, and remaining herbs.
- Stuff each hen’s cavity with the prepared stuffing mixture.
- Place hens in a roasting pan breast side up and roast for about 1 hour or until juices run clear when pierced at the thigh.
- Let rest for 10 minutes before carving.
