Ingredients

  • 8 oz penne or fettuccine pasta
  • 1 cup low-fat cottage cheese
  • 2 cloves fresh garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs (basil or oregano)

Instructions

  1. Boil water in a large pot with salt. Cook pasta according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat; sauté minced garlic for about 1 minute until fragrant.
  3. Blend cottage cheese with half of the garlic oil mixture until smooth to create the sauce.
  4. Once pasta is cooked, drain and return it to the pot; mix in the blended sauce and remaining garlic oil.
  5. Adjust consistency by adding reserved pasta water if needed.
  6. Serve hot, garnished with Parmesan and Italian herbs.
