Description

Ingredients

  • 1 (5 lb) bone-in leg of lamb
  • 2 tablespoons fresh rosemary, finely chopped
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tablespoons Dijon mustard
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the leg of lamb from the fridge and let it sit at room temperature for about 30 minutes.
  3. In a bowl, mix rosemary, garlic, lemon zest, salt, pepper, and Dijon mustard until you form a paste.
  4. Rub olive oil over the lamb and coat it generously with the herb mixture.
  5. Place the lamb on a roasting rack in a pan and roast for approximately 1 hour or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  6. Let it rest for at least 15 minutes before carving into slices.
