  • 2 large sweet potatoes (about 800g)
  • 1 lb (450g) ground beef or turkey
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 cup (150g) frozen peas
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp milk or butter for mashing

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Peel and cube the sweet potatoes. Boil in salted water until tender (15-20 minutes), then drain and mash with milk or butter until smooth.
  3. In a skillet over medium heat, brown the ground meat. Add onions, carrots, garlic powder, thyme, salt, and pepper; sauté until softened.
  4. Stir in peas and simmer for an additional five minutes.
  5. Layer the meat mixture in the baking dish and top with sweet potato mash. Smooth out the top.
  6. Bake for 25-30 minutes until golden brown on top. Allow to cool slightly before serving.
