Description

Lasagna Roll Ups are a comforting twist on traditional lasagna, featuring tender pasta filled with creamy ricotta, savory spinach, and gooey mozzarella.   • 9 lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach (or 1/2 cup frozen, thawed and drained)
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix ricotta cheese, half of the mozzarella, spinach, Italian seasoning, salt, and pepper until well combined.
  4. Spread a thin layer of marinara sauce in the bottom of the baking dish. Lay out noodles flat and add about two tablespoons of filling to each noodle. Roll them up tightly.
  5. Place rolls seam-side down in the baking dish and cover with remaining marinara sauce and cheeses.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly.
