- 9 lasagna noodles
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach (or 1/2 cup frozen, thawed and drained)
- 2 cups marinara sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a bowl, mix ricotta cheese, half of the mozzarella, spinach, Italian seasoning, salt, and pepper until well combined.
- Spread a thin layer of marinara sauce in the bottom of the baking dish. Lay out noodles flat and add about two tablespoons of filling to each noodle. Roll them up tightly.
- Place rolls seam-side down in the baking dish and cover with remaining marinara sauce and cheeses.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly.
