Description

Ingredients

– 1 lb ground beef or Italian sausage

– 1 medium onion, chopped

– 3 cloves garlic, minced

– 28 oz can diced tomatoes

– 15 oz can tomato sauce

– 4 cups low-sodium chicken broth

– 8 oz broken lasagna noodles

– 15 oz ricotta cheese

– 1 cup shredded mozzarella cheese

– Fresh basil for garnish


Instructions

1. In a large pot, heat olive oil over medium heat. Brown the ground meat for 7-10 minutes, then drain excess fat.

2. Add chopped onion and minced garlic; sauté until softened.

3. Stir in diced tomatoes and tomato sauce, then add chicken broth. Bring to a boil and reduce to a simmer for 20 minutes.

4. Add broken lasagna noodles and cook until tender (10-15 minutes).

5. In a bowl, mix ricotta and mozzarella. Serve soup topped with cheese mixture and fresh basil.

Notes

– For added flavor, use fire-roasted diced tomatoes.

– Customize by adding vegetables like zucchini or spinach.
