Description

  • 2 lbs Yukon Gold potatoes, diced
  • 2 cups fresh corn (or 1 cup frozen corn)
  • 1 cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 4 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the diced potatoes in salted water until fork-tender (10-15 minutes). If using fresh corn, add it during the last 5 minutes of potato cooking time; for frozen corn, add it in the last minute.
  2. In a separate bowl, mix mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  3. Drain potatoes and corn; let cool slightly then combine in a large bowl with the dressing.
  4. Gently fold in green onions and cilantro.
  5. Chill for at least 30 minutes before serving.
