- 4 boneless, skinless chicken breasts (1.5 lbs)
- 3 cloves fresh garlic, minced
- 8 oz penne pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp low-sodium soy sauce
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray. Season chicken with salt and pepper.
- Cook pasta in salted water until al dente; drain and set aside.
- In a skillet over medium heat, heat olive oil. Sear chicken for about 5 minutes per side until browned. Remove from heat, let rest, then slice.
- In the same skillet, sauté garlic until fragrant. Add heavy cream, soy sauce, thyme, and oregano; simmer until slightly thickened.
- In a large bowl, mix cooked pasta, sliced chicken, creamy sauce, and half of the Parmesan cheese.
- Transfer to the prepared baking dish, top with remaining Parmesan cheese, and bake for 25-30 minutes until bubbly and golden.
