Description

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 tsp almond extract
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Beat in the eggs one at a time, then add the almond extract until well combined.
  4. In another bowl, whisk together almond flour and powdered sugar. Gradually fold this into the wet mixture until just combined.
  5. Using a cookie scoop or tablespoon, drop dough onto prepared baking sheets about two inches apart, gently flattening each ball slightly.
  6. Bake for 12-15 minutes or until lightly golden around the edges. Let cool on sheets for a few minutes before transferring to wire racks.
  7. Dust with powdered sugar before serving.
