- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- Cut the tops off the bell peppers and remove seeds; rinse them under cold water.
- In a skillet over medium heat, cook the ground meat until browned; season with cumin, chili powder, salt, and pepper.
- Stir in the cooked rice and salsa until well combined.
- Fill each bell pepper with the mixture until heaping full; top with shredded cheese.
- Place stuffed peppers upright in the baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
