  • 4 bone-in chicken thighs (1.5 lbs)
  • 1 lb baby potatoes, halved
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • Juice of 1 lemon (2 tbsp)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine olive oil, minced garlic, lemon juice, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well.
  3. Add the chicken thighs to the marinade and coat thoroughly; let marinate for at least 30 minutes.
  4. Toss halved baby potatoes with olive oil, salt, and pepper in another bowl.
  5. Arrange marinated chicken skin-side up in a baking dish and nestle the seasoned potatoes around them.
  6. Roast in the preheated oven for 45-50 minutes until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
